Yaupon (Ilex vomitoria) is North America’s only native caffeinated plant, with a rich history rooted in indigenous traditions across the southeastern United States and Northern Mexico, where it was valued for thousands of years as an important food item, medicinal herb, and ceremonial beverage; it was later enjoyed by Indigenous people, European colonists, and early American settlers before fading into obscurity. Naturally drought-tolerant and resilient, Yaupon has long been appreciated for its smooth taste, uplifting properties, and cultural significance, and today it is being rediscovered and celebrated for its unique flavor profile, ecological benefits, and historical importance, offering a sustainable and distinctly American tea that honors its past while embracing a culturally meaningful future.


What does Yaupon taste like?
Yaupon has a naturally smooth, mild, and slightly sweet flavor with very low bitterness, offering a light, grassy, and refreshing profile in its green form, a smooth and balanced taste with subtle herbal notes in a medium roast, and a rich, malty cup with caramel-like notes in a dark roast. Unlike many traditional teas, Yaupon contains no tannins, meaning it does not become overly bitter and can be re-steeped multiple times, and its flavor is often compared to yerba mate, but smoother and more approachable.
